Ingredients

       4 lamb shanks

       1 onion, diced

       3 cloves garlic, minced

       1 teaspoon cumin

       1 teaspoon smoked paprika

       1/2 teaspoon ground coriander

       1 (15-ounce) can of crushed tomatoes

       1 cup chicken stock

       2 tablespoons honey

       Kosher salt and freshly ground black pepper, to taste

Directions

       Season lamb shanks with salt and pepper

       Add cumin-smoked paprika, cinnamon, turmeric, coriander, tomatoes, chicken stock, honey, and olive oil.

       4 lamb shanks

       1 bay leaf

       2 potatoes, peeled and cubed

       2 parsnips, peeled and cubed

Directions

       Preheat oven to 350 degrees F

       Heat Dutch oven, add olive oil and brown lamb shanks

       Add vegetables and cook for 10 minutes

       Pour in broth and wine, add herbs and seasonings

       Simmer, cover, and bake for 90 minutes or until meat is tender. 

Greek-Style Lamb Shanks with Oregano and Lemon

       4 lamb shanks

       1/2 cup dry white wine

       Add lamb shanks and oregano, and cook until browned

       Add wine, chicken stock, and lemon juice

       Season with salt and pepper, and bring to a simmer

       Cook for 2-3 hours or until lamb is tender
