Peri-Peri Chicken Wings Recipe
Ingredients
● 1/2 cup (120 ml) chicken broth
● 1/4 cup (60 ml) soy sauce
● 1/4 cup (60 ml) rice vinegar
● 3 cloves garlic, minced
● Baking powder
● 1 teaspoon ground ginger
● 1 teaspoon peri-peri sauce
● 2 teaspoons vegetable oil or olive
oil
● 8 ounces (225 g) boneless, skinless chicken breasts cut into 1-inch (2.5 cm) cubes
Instructions
● Whisk together the broth, soy sauce,
rice vinegar, garlic, ginger, baking powder and peri-peri sauce in a small
bowl. Pour the mixture into a large resealable bag.
● Add the chicken cubes and seal the
bag. Turn the bag so that the chicken is coated with the marinade. Refrigerate
for at least 2 hours or overnight.
● Preheat a grill to medium heat or
preheat the oven to 375°F (190°C).
● Remove the chicken from the marinade. Grill or bake for about 8 minutes per side until tender and slightly charred around the edges. Serve hot.
