Peri-Peri Chicken Wings Recipe

Ingredients

       1/2 cup (120 ml) chicken broth

       1/4 cup (60 ml) soy sauce

       1/4 cup (60 ml) rice vinegar

       3 cloves garlic, minced

       Baking powder

       1 teaspoon ground ginger

       1 teaspoon peri-peri sauce

       2 teaspoons vegetable oil or olive oil

       8 ounces (225 g) boneless, skinless chicken breasts cut into 1-inch (2.5 cm) cubes 

Instructions 

       Whisk together the broth, soy sauce, rice vinegar, garlic, ginger, baking powder and peri-peri sauce in a small bowl. Pour the mixture into a large resealable bag.

       Add the chicken cubes and seal the bag. Turn the bag so that the chicken is coated with the marinade. Refrigerate for at least 2 hours or overnight.

       Preheat a grill to medium heat or preheat the oven to 375°F (190°C).

       Remove the chicken from the marinade. Grill or bake for about 8 minutes per side until tender and slightly charred around the edges. Serve hot.
