Piri piri chicken with fresh herbs for loads of micronutrients

Grilling season has arrived, so it is time to fire up the grill. Try this delicious chicken dish, which will excite you to fire up the grill. Portuguese cuisine's Piri Piri Chicken is known for its flavorful chili and fresh herbs. Enjoy!

 The main component of this Chicken dish is the Peri Peri Sauce which can be used to make recipes like Peri Peri Wings and Halal Piri Piri Stir Fry with rice.

 You could choose whichever part of the chicken you prefer, the thighs or the leg piece.

 Ingredients:

         1 chicken, about 2kg

For the Piri-Piri marinade:

  • 2 dried hot chilies
  • 100ml vinegar
  • 6 red chilies
  • 6 garlic cloves
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp golden caster sugar
  • 2 lemons, juiced

 Recipe:

To make the marinade, tip the dried chilies and the vinegar into a pan and bring to a boil. Remove the heat and leave the chilies to soak until the vinegar is cold.
Put the red chilies, garlic, soaked dried chilies, and vinegar in a food processor and blitz. Add the smoked paprika, oregano, thyme, sugar, a pinch of salt, and lemon juice. 
Blitz again to a paste and set aside. Sit the chicken in a shallow dish and use a small knife to score all over with cuts 1cm deep. Make sure you do the legs and the underside. 
Tip the marinade over the chicken and massage it into the cuts. Cover and chill for at least 4 hrs, but overnight would be better.
When you’re ready to cook, heat the oven to 180C.Roast the chicken for 1 hr, then turn the heat up to 220C and cook for 30-35 mins until a crust has formed outside the chicken.

Remove from the oven and leave to rest for 30 mins. Serve with homemade wedges.
