Lamb Cooked in Parchment Paper

● 4 thick slices of lamb leg or chop pieces according to an individual's preference or availability.

● 2 tbsp olive oil

● 1 clove garlic – can be added as per convenience.

● 4 sprigs of oregano or more.

● red pepper slices cut to perfection.

● juice of a lemon. Preferably one lemon

● salt & pepper – according to taste.

 

 Instructions while cooking:

● Preheat the oven to 400 degrees. Follow it up by cutting 4 parchment papers. They should be large enough to enclose the whole meat and have it covered. Also, make sure to add about 4 inches extra on all sides.

● Place meat in the centre of the paper. Do not place it elsewhere. Also do not forget to brush the meat with olive oil.  Garlic studs from a fresh clove of garlic are selected and pushed into the meat, as per desire to get that pleasant taste.

● Scatter a good amount of oregano on the lamb cooked. Season it with salt & pepper according to your taste. Top it up with some lemon juice, as there's nothing that hits harder than citrus. Add slices of red and yellow peppers and sprinkle a few cut-out pieces of mushrooms.

 

● Close the parchment now into suitable pouches. This is done by pulling edges over and then crimping them together around the package.

 

● Place parcels on a cookie sheet as it helps immensely with Roast Lamb. Ensure there will be no leakage from packages at any side. Bake at 400 degrees F and set the time at 12 min. Now gently reduce the time to 350 degrees F for 45 minutes.
