How to Professionally Cut Mutton Leg into Pieces for Curry?
Curry, a delicious concoction of herbs and spices, made with any kind of meat and usually served with boiled rice, is a dish that is said to have originated in India but nowadays has become a staple all over the world. Not only can whip up a curry at home from scratch, but it will be far better than anything your local takeout place has to offer.

When preparing curry at home, the first thing you have to do is select the right meat. Now, you can choose from a wide variety of meats, but it is better if you opt for mutton. Why mutton? You'd ask because mutton not only has a lesser cook time than beef but it is also tenderer. Other than that the aroma associated with mutton works better with gravies and curries.

The next step is to choose the right cut of meat. Whether you have chosen mutton or beef, the shoulder cut is best for making curry. The shoulder cut is usually called chuck steak, although it is lean but has low external fat and a decent amount of marbling. Other than the shoulder cut, you can use the leg cut, which is fairly lean and tender making it ideal for a curry.

When cooking a curry, you have to make sure that the meat you are using does have a high-fat content, because you don't want a fatty curry. Make sure that the meat is perfectly trimmed and does not have any excess fat. If you have chosen to use the mutton leg for your curry make sure that it is cut according to it. Here are a few tips that will help you cut mutton leg professionally for curry:

·         Before you start cutting make sure your knife is sharp, otherwise, you will not be able to make clean cuts and it will be difficult to remove the fat layer.

·         Try to cut the meat into cubes about a centimetre in length and a couple of centimetres wide.

·         Make sure that there is a minimum layer of fat on your cut.
